SGS’s Lorie Tetard’s creation is a case of curious by name, curious by nature. The mixologist explains her cocktail. ‘Never taking things for granted, I like to go out of my comfort zone and I am curious about a lot. Curio bay is a place in New Zealand where you can swim with dolphin, camp, learn history of the earth and look for penguin at night. It is not your classic outdoor day; it is not your classic cocktail. Kai means food in Maori and food is what brought me to learn about mixology.’

INGREDIENTS

  • 50 ml beefeater gin
  • 50 ml kay prep

KAI PREP

  • 4 peppers
  • 100ml Pernod absinthe
  • 21g pepper
  • 3 lemon zest
  • 40g sugar
  • 1/2 thyme bunch
  • 500ml water

METHOD

  • Pour the Kai 50 ml in a cocktail shaker and add the 50 ml beefeater
  • Dry shake
  • Fill the shake with ice and shake
  • Serve in the selected glass (test tube)
  • Garnish with thyme flower on the top of the glass.
